Triple Chocolate Espresso Brownies

Hello everyone ! Hope you are all doing great. No, I didn't quite forget about this space. Just got tied up with some personal matters. Meanwhile I have been cooking a lot, though I couldn't take a lot of pictures. But sooner or later, you will get to see more recipes from me,I promise.

This post has been lying in the draft for sometime now and I thought it is apt for this time, with the weather getting so cooler every day. Fall is in full swing in Colorado,almost every tree is yellow or red. The mountains were looking astoundingly beautiful a few weeks back. I love Fall ! But then I love all four seasons I get to see here, unlike in my homeland.

Triple Chocolate Espresso Brownies

I love the smell of fall ! The colorful leaves, pumpkins, apples and the cool breeze... Not to mention all the baking and the warm smell of cinnamon in my kitchen. This is not a Fall recipe, but I would say, brownies are an anytime favorite. So I am sharing this recipe here today, and yes I will come back soon with some exciting Fall recipes for you all.

Triple Chocolate Espresso Brownies

These Brownies are dangerously addictive, with a subtle coffee flavor. If you want to make a twist to your usual brownies recipe, this is a great one to try. So get ready to warm up your kitchen and also to indulge yourself !

Triple Chocolate Espresso Brownies

Preparation Time: 15 min
Baking time: 30 min
Yield: 16 pieces
Adapted from: Very Merry Cookies, Better Homes and Gardens


Ingredients:

Butter- 1/2 cup,cut into 1/2 inch pieces
Bittersweet chocolate ,chopped- 4 ounces
Unsweetened chocolate,chopped- 3 ounces
All purpose flour- 2/3 cup
Baking soda- 1/4 tsp
Salt- a pinch
Sugar- scant 1 cup
Eggs- 2
Instant espresso powder- 1 Tbsp
Pure Vanilla extract- 1 tsp
Semisweet chocolate morsels- 1 cup


Method:

1.Using a double boiler, melt bittersweet chocolate ,unsweetened chocolate and butter. Stir well, and let cool.You can also use microwave to get this done, but keep it on low and check every 30 seconds and stir well.
2.Preheat oven at 350 degree F.Line a 8 by 8 inch baking pan with parchment paper, with flanking edges at both end.Grease it lightly and set aside.
3.In another mixing bowl, stir together flour,baking soda and salt.
4.Stir sugar into the cooled chocolate mixture.
5.Add eggs into this, one at a time and beat well until mixed.
6.Mix espresso powder and vanilla in a small mixing bowl and add into chocolate mixture,stir well.
7.Add flour mixture and stir until combined,do not over-mix.
8.Fold in chocolate morsels.
9.Spoon this batter into prepared pan.
10.Bake for about 30 minutes or until a tester inserted comes out clean.
11.Cool on a wire rack before you cut into brownies.
12.Suggested frosting is chocolate cream cheese, but I omitted that part.

  14. Chocolate is a comfort food for me. When I am stressed or waiting for an important thing to work, I sit with few chunks of dark chocolate. Thank you little dark chocolate is good for us. I love your brownies. That too its triple chocolate. What more should I say? Blissful indulgence.

  19. Hello dearie...how you been? You must be terribly busy with kids and life...I know that well coz are in the same boat! Well am must blogging often lately due to school hols. Let's see how it goes next year bcoz my lil gal will start her kindie as well. I gotto be a SuperMama! Phew...

  20. Looks delicious! Did you double the recipe in the photos? I noticed that you used a 13x9 pan in the photo but it calls for a square pan in the recipe. I am hoping to make this for a crowd so let me know!

      I did not double the recipe. What you see in the pic is a 7 by 11 inch pan which holds as much batter as a 8 inch square pan. Sorry about the confusion. I must add that you are a great observer :)
