Everyday Chocolate Cake


One fine Wednesday, I suddenly started craving for a chocolate cake.Without thinking much, I googled for "simple loaf chocolate cake" and yes,I was exactly looking for a not-so-calorie-rich, simple as in "one bowl", chocolate cake that I can whip up in a jiffy.I was so happy to have found this recipe ! Now I wonder why didn't I ever search for such a thing before ! If I knew, I would have made this a thousand times, well almost,by now. If you are looking for a cake that you can have without much guilt and without much fuss,this is the cake for you !

Everyday Chocolate Cake

I didn't have much time left before I took my son for his swimming class that day,and I had to hurry up with the pictures. With my lil buddy around,taking pictures is exactly like, or shall I say worse than,someone pointing a loaded gun at your back and you are asked to do something within matter of seconds.When he was smaller,he used to grab everything and sometimes eat the food ,his mom,a desperate blogger,rather than a desperate housewife,would have neatly kept,ready for the camera.

Now as he turns 3.5,it is more like,"Mom what you doing,can't you see I'm hungry"(as in,why can't you leave these silly things and come take care of me because I'm more important).Or he comes up with "what is this and why is this" kind of stuff.Sometimes he just says random dialouges and just go away. Whatever it is ,the intention is the same,"I'm absolutely not liking what you are doing now".Period.Can't blame him. Sometimes I feel so guilty. I'm sure most of you agree with me on this pathetic plight of a food blogger,making your family wait while you take the freshly prepared food for taking pictures,not paying much attention to a little naughty guy who wants to show you some new tricks he learned,act like you are not seeing the look on the face of your bigger kid ,clearly stating,"seriously Mom,you want me to wait when I am so hungry".What do I do,you tell me !

Everyday Chocolate Cake

Stories apart,this is a wonderful cake,though not as great as this moist chocolate cake .It is a little denser and you get the intense taste of dark cocoa (we love it though).But it has less calories when compared to most other chocolate cakes and for the same reason,it can be your everyday cake ! Ingredients:

Unsalted Butter- 1/2 cup
Brown sugar,packed- 1 cup
Granulated sugar- 1/2 cup
Egg- 1
Buttermilk- 1 cup
Pure Vanilla Extract-1 tsp
All purpose Flour- 1 1/2 cup
Dutch Processed cocoa powder- 3/4 cup
Baking soda- 1/4 tsp
Baking powder- 1/2 tsp
Salt- a pinch

Method:

1.Preheat oven at 325 degree F. Take a loaf pan that is 9 by 5 inch and grease or line with parchment paper and set aside.
2.In a large mixing bowl, cream the butter and sugar until creamy.
3.Add the egg and beat well.Mix the vanilla and buttermilk. Beat well to mix in.
4.Sift the flour,cocoa,soda,baking powder and salt directly into this wet mixture.
5.Stir everything together using a wooden/silicone spatula until everything is mixed well.
6.Pour this batter into the loaf pan and bake for about 60 minutes or until a tester inserted comes out clean.
7.Cool the cake in the pan for a few minutes before you transfer onto a wire rack and cool completely.
8.Serve it as it is with some powdered sugar dusted on top or with some whipped cream.

Notes:

1.If you don't have buttermilk, you could make your own at home if you have milk and vinegar/lemon at home .Take about a cup of milk and heat it till it is lukewarm. Add a tablespoon of vinegar or lemon juice,mix it,your buttermilk is ready !

  6. Your story sounds very similar to mine. I have 3.5 year old daughter and 5.5 year old son. It's nearly impossible to take pictures around them. Sometimes I let them watch 30 minute TV shows just so that I have a peaceful photo shoot. My 5 year old doesn't mind, but my daughter still bothers me as she doesn't care about much of a TV show. It's tough. I try to cook in the morning when both kids are in school. I only have 2 hours including cooking + photo shooting. I schedule my photo shoot. =) so 2 days or 1 day (if I can cook 2 dishes) out of a week, they eat pre-cooked meals for dinner (as I mainly make food, not baked goods). You did a wonderful job taking pictures though. Beautiful and delicious chocolate cake, just perfect for everyone's chocolate craving. :-)

    1. I try to cook when they are away as well. But sometimes it doesn't work :-)And yes,so many bribes like extra tv time or some candy while I shoot

  16. Oh I want a slice so desperately! My husband is a diabetic, so fatty me ends up eating it and then I have major guilt. I guess I could bake the cake, eat a slice and give the rest to my UPS driver! GAAAH!

  17. Your little boy is really smart and witty, i should say :) it's a thing i realize as well, when i'm taking pictures of the prepared food, i get cranky. Bad habit, bad habit. With kids, nothing is really predictable anymore.
