Chocolate Crinkles


Hope you are all enjoying the last few days of summer. If I say I am super busy these days,it would be an understatement ! All the activities for kids,parties,some hiking etc is taking all my time, which makes me wish that we had more holidays during summer, something like a 2-3 days long weekend. Though the days are longer in summer,it's just not enough for my family ! I guess most of you will agree with me on this thought !

I made these cookies for sharing with Manisha, before I left for vacation.Thankfully I managed to click some pictures,though I was very busy at that time. It's been a month since we got back from India,but I am still in the holiday mood. I cooked a lot during the past 2 weeks, but not a single picture is taken ! Seems like I don't even know how to set up the camera for taking food pictures now .Even the thought of taking food pictures is making me nervous. I will have to start taking baby steps again,I guess !

These cookies are extremely good ! The name crinkle must have come from the crinkles that form on the confectioner's sugar coating,revealing the dark chocolate inside, while baking. They are really chocolatey and fudgy. They are not too sweet,so you will end up eating a lot,at one go.Don't complain that I didn't warn,these are dangerously addictive ! The recipe says, these cookies are best when you have them on the same day you bake,so take that advice into your heart and help yourself !

I will be making these again ,sometimes soon. If you love chocolate,or if you have kids, you must make this ! I can guarantee that this is a keeper recipe and everyone will love these cookies,even those who are not so fond of chocolate .

Preparation time : 10 min + several hours waiting time
Baking time: 8-10 min
Yields: ~36 cookies
Adapted From: Joy of baking

Ingredients:

Unsalted Butter- 4 Tbsp
Semisweet chocolate-8 ounces
Granulated white Sugar- 1/2 cup
Eggs- 2
Pure Vanilla extract- 2 1/2 tsp
All Purpose Flour- 1 1/2 cup
Salt- 1/4 tsp
Baking powder- 1/2 tsp

For topping: 1 cup powdered sugar,sifted

Method:

1.Melt the chocolate and butter using a double boiler or in the microwave,frequently stirring.Cool to room temperature.
2.Beat the sugar and eggs,until thick, pale and fluffy.
3.Beat in vanilla extract.
4.To this add, chocolate-butter mixture and mix well.
5.In a separate mixing bowl,whisk together flour,baking powder and salt.
6.Add this dry mixture into chocolate mixture,stir until everything is incorporated.
7.Cover with plastic wrap and refrigerate until it is firm enough to make balls.(I kept it overnight)
8.Preheat the oven at 350 degree F and make 2 cookie sheets ready,lined with parchment paper.
9.Place powdered sugar in a shallow bowl.
10.Make 1 inch balls out of the dough,roll them in powdered sugar.Make sure each ball is completely coated with sugar.
11.Place the balls about two inches apart, on the baking/cookie sheet.
12.bake for about 8-10 minutes or just until the edges are firm.Do not over-bake.
13.cool o a wire rack
14.These are best when you eat them the day you bake.Store in an air tight container,they keep good for a couple of days.

    I have tried such cookies at the bakery and they taste awesome.
    I did not get the privilege to try them at home, may be because I thought I should not waste the ingredients the experienced people could utilize otherwise :)
