Lemon and Chili

  I learned to make this pickle from my sister-in-law.  She is quite wary when it comes to Indian cooking but  excellent with her casseroles, cakes and cookies.  She is going to be aghast when she reads this post today, someone posting a recipe of hers is going to ball her over.  This one is for you Sy.  Thank you. I loved the pickle and V has been asking for more.

  My husband so loves this pickle he has started this new thing.  Collecting lime rind after making lemonade to pickle them. Now how this pans out is yet to be seen.  Will tell you all about it once my husband figures out a way to replicate the taste of this pickle with the lemon rind..  As for now please enjoy the real deal all the way from Texas.  Enjoy y'all!

Ingredients:
Lemon - 5
Chili - 10 nos
Garlic - 5 - 6 pods
Mustard - 1/4 tspn
Vinegar - 1/4 cup
Asafoetida - a pinch
Methi Powder - a pinch (optional)

Method:
1. Place the lemons in enough water and bring to a boil
2. Make sure they don't break but has changed color slightly like its blanched
3. Cool and cut them into 8 pieces
4. Heat sesame oil in a pan and splutter mustard.
5. Add garlic, curry leaves and saute
6. Switching the heat off season this further with a pinch of asafoetida and methi powder
7. When the tempering is cool add cut lemons and vinegar, mix well.  Make sure you have salted the pickle well
8. Over time the lime will absorb the salt so its imperative the pickle is a tad over salty when you bottle
9. Keep the pickle in an air tight glass bottle for at least 10-15 days for it to set and ingredients to blend well well
10. You can check for salt after 5 days of bottling to make sure it is enough

  11. Lemon pickle with garlic! Sounds super.., something from Texas should definitely rock :), so does this pickle! Would be yummy with a plain curd rice ~ most of my lunch days would be that! I am going to try ur sil recipe! Loved the click as always Sunita!

Thanks for sharing this mouth watering pickle....the recipe sounds very easy...Two qstns-1.do I have to keep the pickle in sunlight to marinate or in room temperature its ok??? 2.in which container I have to store-glass, airtight or any kind of container will go well...hope u won't mind asking this...I am a novice in the field of pickle making....

WOW....THIS one is good.....sunitha...is it lime or lemon that you used?...I wish to make this one....But iam very bad in adding salt when it comes to pickles...any approximate measurements?...BTW tried that maries bicuit pudding....and my son loved it.....will post it in my blog once i make it again:)thx for the recipe...

  45. Gulmohar, I love this! I suppose this is similar to Moroccan pickled lemons maybe??? I love those, so I'm thinking I would love this. Are you going to post a dish with them in it-I would love to see how they are used traditionally. Then, i might really muster the effort to make them out of understanding how they're used and such...

    Kamalika:
    1. I would suggest your bottle the pickle in a glass or ceramic container which can be closed air tight
    2. I know I used the word marinate loosely early which I have changed in the recipe now. What I was trying to say is once the pickle is made and we bottle it does not taste good on the same day or a couple of weeks. I was suggesting that the pickle be kept closed for at least 15 days for all the ingredients to incorporate and it's the blend taste that makes the pickle tasty.

    1. Salt.........hm...it's kind of difficult to approximate here but I am glad you pointed it out :) I will earnestly make an effort to get a spoon measurement and update you. Sorry that I am unable to give it right off, I play it by ear and I know that is not good enough for a recipe.
