Sour Cream Coffee Cake With Pecan Streusel Topping


Hello everyone ! Hope you all, the wonderful moms and moms-to-be out there had a terrific mother's day . I was supposed to post this before Sunday and wish you all a happy mother's day, but it just got late. I am not going to tell you all the silly reasons,why I couldn't do it on time. Here I am,with a great coffee cake recipe to wish all the moms, a wonderful journey throughout your motherhood !

Sour Cream Coffee Cake

I had a priceless day. My 10 year old planned it for weeks and came up with some great ideas, that she carried out with the help of her father. The 3.5 year old, surprisingly didn't break the suspense by talking loudly, unlike all the other time and joined them in making breakfast for me and and giving the gifts his sister and father chose. Usually he will come and tell me,"oh chechi is making your birthday card" or "Acha has some flowers for you" and such.I’m glad that he didn’t ruin it because it was a nice surprise to have donuts, scrambled eggs, orange juice, lovely white orchids, and a handmade mother’s day coupon book in front of you, all in a tray at my bedside!

Usually every year we start our hiking season on Mother's day,it has become a tradition in our family. If you read the post from last year(It's funfetti cupcakes !), you will know what I am talking about. But this year,sadly the weather wasn't great for a hike, so we went for a long walk on one of the beautiful, lush green and prairie-dog-filled bicycle trails in our small city.It was so refreshing and kids also enjoyed the walk.

Saturday, my darling daughter had her first guitar recital,oh boy, wasn't mama proud ! That indeed was a priceless mother's day present in advance ! We had a great evening of music and fun.

Sour Cream Coffee Cake

Without much further ado, I would like to share this wonderful coffee cake with you.This is rich,moist,flavorful,nutty and everything that you expect from a coffee cake. Even the little picky eater devoured it and asked for more ! Hope you will love it as much as we all did.

Preparation time: 15 min
Cooking time: About an hour
Serves: 10
Adapted from here

Ingredients:

Unsalted Butter- 1 1/2 stick (3/4 cup)
Granulated Sugar- 1 1/2 cup
Eggs- 3 ,large
Pure Vanilla Extract- 2 tsp
Sour Cream- 1 1/3 cup
Cake flour (not self rising)- 2 1/2 cup
Baking powder- 2 tsp
Baking soda- 1/2 tsp
Salt- a pinch

For the Streusel:

Light brown sugar- 1/4 cup
All purpose flour- 1/2 cup
Cinnamon- 1 1/2 tsp
Salt- a pinch
Cold butter, cut into 1 inch pieces- 3 Tbsp
Chopped Pecans/Walnuts- 3/4 cup

Method:

1.Preheat oven at 350 degree F. Grease a 10 inch tube pan.
2.Cream butter and sugar until creamy and light.
3.Add eggs one at a time and beat well.
4.Add vanilla and sour cream,mix well.
5.In a separate mixing bowl sift together the flour,baking powder,baking soda and salt.
6.Add the flour mixture into the wet mixture and slowly mix until combined.
7.Mix everything listed under for streusel, pinch together using your fingers until it forms a crumble.Mix in nuts ,if you are adding any.
8.Spread half the batter evenly at the bottom of the prepared pan,level with a knife.
9.Sprinkle with 3/4 cup streusel.Spoon rest of the batter over it.Top with remaining streusel.
10.Bake for 50 to 60 minutes or until done.
11.Cool in the pan for at least 10 minutes. Transfer onto a wire rack,streusel side up and cool.
12.Serve warm.

Notes:

1.I used pecan in the streusel.
2.If you are using a bundt pan, as I did, transfer the cake and cool streusel side up.
3.The original recipe calls for a glaze. This is really rich and sweet enough for me, so I didn't add any glaze.If you wish, you could mix 1/2 cup confectioner's sugar and 2 tbsp maple syrup and mix and spoon on top of streusel. wait until it is set, before serving.
