Katharine Hepburn's Brownies

This is such a popular version of brownies, I don't need to tell you much about it ! The legendary actress, Katharine Hepburn shared her family's signature brownies recipe during an interview with a magazine and ever since they published it in 1975, so many, including Saveur magazine and n number of blogs reprinted it. Here is my version slightly adapted from Epicurious.

Rocky Road Brownies

Today is another big day for Indian Cricket. India is playing the World cup finals for the third time in history and I wish our team all the luck. Hopefully they will bring the home the cup and if they do that will be one which we are getting after a long 28 year gap. Fingers crossed.

Rocky Road Brownies

I still remember the first time I learned the game. I was in primary school and this was the time before TV and Cable. My father ,uncle and grandfather all ardent fans would be listening to the commentaries on radio. It was fascinating, and I wondered why otherwise sober people would scream and make funny noises of exhilaration or disappointment. It was enough to pique my interest. Now my noise was in the mix asking them what is going on. They tactically explained only the major details like wicket and runs. It was enough for me then, I suppose. But after a year or so while I was visiting my cousins over summer vacation I got more information. One of my elder cousins was totally into the game and therefore everyone else in the family. Once when the game was going on my cousin needed company to go the neighbors, since only they had TV at that time. I was an easy sport at that time and accompanied her. That's when the rules of the game was cleared and my enthusiasm was fueled by my dear cousin. I had arrived in the cricket scene so to speak. What about you? I would love to hear your story of how you got into watching cricket matches.

Rocky Road Brownies


When you have a game to watch it's always nice to have snacks and goodies handy. Though I still have some aval pori/ Beaten rice snack, I decided to make some brownies as well. Also, I wanted to join Ria and the rest of the blogging world, who is participating, in an event where everyone is making finger-foods especially for cricket time. So here is a recipe for a beautiful Rocky Road Brownie. Best part is you can enjoy these even when there is not game going on.

Oh, I have to tell you this, the selection of a blue background was completely by chance. Now I realized that we all bleed blue today :-)

Rocky Road Brownies


Ingredients:

Butter- 3/4 cup
Granulated sugar- 1 cup
Light brown sugar- 1 cup
Cocoa powder- 3/4 cup
Hot water- 3 Tbsp
Eggs- 2
Pure Vanilla extract- 2 tsp
Salt- 1/4 tsp
All purpose flour- 1 1/3 cup
Baking powder- 1/4 tsp
Chopped walnuts- 2 cups
Miniature marshmallows-2 cups
Semisweet/Bittersweet Chocolate chips- 1/2 to 3/4 cup

Method:

1.Preheat oven at 350 degree F. Grease and flour a 9 by 13 inch rectangular pan.
2.In a heat proof bowl combine the cocoa powder and butter.keep it in a boiling water-bath and mix well.Or mix them and keep in the microwave in a microwave safe bowl and keep on high for half a minute to one minute or until everything is combined together.Take out in between and whisk together.
3.Add the hot water into this and mix well.
4.Mix the sugars and salt with egg in another bowl.Add vanilla extract and mix again.
5.When the cocoa mixture is cool enough add it into the sugar mixture and mix well.
6.Stir in the flour and baking powder.
7.Fold in half the nuts.
8.Pour into the prepared pan and bake until done, for about 25 minutes.
9.Take out from the oven. Sprinkle the chocolate chips and the marshmallows.
10.Meanwhile keep your oven on broil option.Keep the pan back into the oven and keep it for half a minute or until the marshmallows have puffed up and slightly browned.
11.Cool completely before cutting into squares.

Cream Cheese Brownies

  This summer seems really hot, congenial for weeds but a lot of work in the yard.  I wish it were flowering weeds than the terrible other kind that received me home from my vacation. If so, my yard would then have been a flower haven.  I don't know if I am making sense, the thing is there is too much weeds and I am afraid my neighbors are looking down with disdain.  Not for long though, with the help (sometimes, but otherwise a bother) of my kids we are getting them down.  However, involving means I have to bribe them.  I am sure you will agree.  But who is complaining, this pushes me to make sweet treats which I enjoy eating as well as sharing with you. Today I am following the recipe from "the joy of baking" site.  I follower her to the T this time, though I generally improvise and give my own twist.  My brains were too fried after all that sun to put in any more effort.  The brownies were delicious and I recommend this recipe highly.  Thank you 'Joy of Baking.'

Creamcheese Brownie

Ingredients:

For the Brownie layer:

Unsalted Butter- 1/2 cup
Unsweetened chocolate- 4 ounces
Granulated white sugar- 1 cup
Pure vanilla extract- 1 tsp
Eggs- 2
Flour- 1/2 cup
Salt- 1/4 tsp

For the Cream cheese layer:

Cream cheese- 8 ounces
Granulated white sugar- 1/3 cup
Pure vanilla extract- 1 tsp
Egg- 1

Creamcheese Brownie

Method:

1.Melt the butter and chocolate together in a microwave oven, stopping and stirring every 30 seconds or so.Mix well with a wooden spoon.
2.Add the sugar and vanilla extract, mix well.
3.Add the eggs one at a time and stir well with the wooden spoon.
4.Now add the flour and salt and mix with the spoon till the batter becomes smooth.
5.Line a baking pan (9 by 9 square or 9 by 2 round) with aluminium foil.
6.Pour this batter into the pan after saving about 1/3 cup of the batter.
7.Process the cream cheese until smooth using your hand mixer or food processor.
8.Add sugar and mix well followed by egg and vanilla extract.Mix again.
9.Spoon this over the brownie layer and even out the top.
10.Spoon out the left over brownie batter oven this to get a marble effect.
11.Bake for about 25 minutes in a preheated oven at 325 degree F.
12.cool on a wire rack and chill in the refrigerator for at least a couple of hours before cutting into pieces.
13.The cake is quite sticky, so you may have to wipe your knife quite often to get clean pieces.

Brownies

There are hundreds of brownie recipes in the blogosphere. I am sure you have your own way of doing it too. After a lot of permutations and combinations I have come up with my own recipe that works like a charm. My children love it and so do my DH and me. This brownie with a dollop of vanilla ice cream makes a perfect dessert.


 I hope you are doing well wherever you are.  Its time for me to come around and see what you have been up to now and drool over some of your recipes. Let me also say how glad we at Collaborative Curry are that you visit us and tell us about how much you like our recipes and photos. Hoping you will have fun treating yourself and your family to some delicious brownie I will sign off for today.




Ingredients:

Flour- 1 cup
Baking powder- 1/2 tsp
Salt- a pinch
Granulated sugar- 1 1/3 cup
Butter- 1 cup
Eggs- 3
Pure vanilla extract- 11/2 tsp
Cocoa powder- 1/2 cup
Chocolate chips- 2/3 cup(optional)

Method:

1.Preheat the oven at 350 degree F.Sift the flour, salt and baking powder together.
2.Beat the butter and sugar until soft and smooth.
3.Add the eggs one by one and beat well to incorporate.
4.Beat in the vanilla extract and the cocoa powder
5.Fold into the flour mixture alternately with the chocolate chips, if you are adding any.
6.Transfer into the greased 9 inch cake pan and bake for 35-40 minutes or till a skewer inserted comes out clean.
7.Cool it for a few minutes and transfer onto a wire rack and cool completely.
8.Serve with vanilla ice cream or any ice cream of your choice.



Notes:

1.I have baked it with 1 more egg, and it will give a more cakey texture.
2.Adding chocolate chips will give a mosaic gooey texture and my family love it :-)
3.You could replace the chocolate chips with nuts of your choice if you want it to be nutty .
4.This recipe will give you brownies with a crumbly top, as you can see in the picture.
