Pecan Logs- A Guest Post For Ambika's Kitchen

I have been blogging for almost 3 years now and I am so happy and proud about it. Blogging has given me a lot of new friends and opportunities to learn so many new things every day.I am so glad to be a part of this wonderful community !

Pecan Logs



Cookies always reminds me of holiday season ! But I do make cookies, even when it is not holiday season, sometimes for my sweet kiddos and sometimes to share with great friends. These cookies fit to any occasion in your mind. If you are planning to share this with your loved ones or friends,I bet you will be asked for the recipe ! This is nutty,buttery,airy,crunchy and everything superior,more than what you expect from a nut cookie.

Pecan Logs

My small family is in love with them. The batch is almost getting over and probably I will have to make a fresh batch ! This is not too sweet and toasted pecans gives a really nice flavor to them.If you decide not to dust them with powdered sugar or you want to roll them in powdered sugar, they taste fantastic.Hope you will all try this and let us know how you loved them.

Preparation time: 5 minutes for making dough + 30 minutes for rolling
Cooking time- 15 minutes
Yield- 4 dozen cookies

Ingredients:

Pecans- 2 cups,toasted
All purpose flour- 2 1/2 cups
Baking powder- 1/2 tsp
Salt- 1/4 tsp
Unsalted butter- 1 cup,softened
Confectioner's sugar- 1 1/4 cups,sifted
Egg- 1
Pure Vanilla Extract- 2 tsp

More confectioner's sugar for dusting

Method:

1.Toast pecans in a microwave.Spread them on a kitchen roll or microwave safe plate, and microwave on high for 2-3 minutes. Stir after every one minute and toast till you get a nice aroma.Cool down and grind it to a coarse meal.
2.Whisk together the flour,salt and baking powder in a bowl and keep aside.
3.Beat together butter and sugar until light and fluffy.
4.Mix in vanilla nd egg,beat well until combined.
5.Add flour mixture and half of ground pecan. Mix on low speed until everything has combined well.
6.Cover with a plastic wrap and refrigerate for at least 30 minutes.
7.Preheat the oven at 350 degree F.
8.Take 1 Tbsp of dough and roll into 2 inch logs, using both your palms. It should be about 1/2 inch thick.Roll logs in remaining ground pecans.
9.Place on a cookie sheet lined with parchment paper an inch apart.
10.Bake for 14-15 minutes or until sides start turning golden brown.
11.Cool in the cookie sheets for a few minutes.Dust with powdered sugar if desired. Then transfer to a wire rack and cool completely before storing in an air tight container.
